CSA: week 7

Happy Memorial Day! All four of us are lucky enough to have this day as a holiday from work and school. Aside from taking some time to remember those who have died while serving our country, I am also taking inventory of our CSA situation.

  • bunch carrots
  • parsley
  • kale
  • bok choy
  • salad greens
  • patty pan summer squash
  • yellow summer squash
  • cucumber

I remember first seeing patty pan squash at a farmers’ market about a decade ago. I love the way they look, but I can’t say that I’ve ever actually taken the time to look up recipes for using them. I think I might just sautee them with onions as a side for steak later this week.

The other noob for this week’s box is the bok choy. I plan on cooking it with some sesame oil, coconut aminos, and ginger tonight; I’ll serve it with some grilled salmon.

I got a double batch of kale this week because I once again made use of the swap station at our pickup location. I haven’t been totally enthused by the spring onions that have been in so many of these boxes, so I switched out our bunch for an extra share of kale. This fam loves its greens!

As for the rest of the box, I’m about the slice up the cucumbers for snacking, and the parsley will probably be used as a topper for some salsa chicken I’ll be making later in the week. The salad greens and carrots will be gone in no time!
